    Vinification

At Ultimate Provence, the grape varieties come together perfectly to produce a beautifully fruity wines with floral nuances raised by spicier notes. The grape varities Syrah and Rolle (Vermentino) heavily influence this. Its pale colour with sometimes coppery or silver reflections is the result of a know-how applied in the selection of the best juices from the plots, but even more so in the press. Stabling on lees then follows in order to enrich the bouquet and the mouth. Fermentation is held around 16-18°C. Reduced ageing, on the lees, precedes the final blending before bottling.
