    Appearance

    Light peach rosé, salmon hue, very bright

    Nose

    Very expressive, lively and intense with notes of citrus, stone fruit, exotic fruit and light spicy notes

    Palate

    Frank attack with a lot of roundness, fleshy wine elegantly structured, complex with fruity aromas (vine peaches). Round, floral and very long finish, fine bitters. Clean and round on the palate, light finish. Full-bodied and well-balanced.

    Food pairing

    Harmonious combination with grilled red mullet, a tian of vegetables "à la niçoise", a salad of octopus and spiny artichokes with basil, penne with grated bottarga and olive oil


    Serving advice

    Ideal tasting temperature around 10°C.
    Tip : rather than putting your rosé in the freezer, put it in an ice bucket with water and ice cubes.

    Vinification

    The Grande Cuvée is a cuvée without concessions, born from the desire to give the taste of the oldest vines of Grenache noir, on the Plateau parcel in Berne, around the old oak tree. The combination of Grenache noir and chalky soil works perfectly, and the vinification consists of letting the intensity, freshness and above all the almost chalky texture on the palate, so characteristic of the wines of this place, express themselves. The harvest is decided when the balance between fruitiness and acidity is found, it takes place at night and the grapes are quickly transported to the cellar. Maceration takes place in the closed press for a few hours, to encourage exchanges between the must and the skins, without fear of spreading a little colour, which does not harm the quality. A two-week stabulation on lees, with daily stirring, favours the release of the aromatic precursors of the grapes, while endowing the mouth with an incomparable fatness. Fermentation takes place in vats for part of the wine, and in oak and acacia barrels for another part, with maturation on fine lees for 5 months. The result is obtained by the final reassembling of the vat wines and the wood wines, without the woody notes ever weighing down the bouquet or the palate. On the contrary, this original maturing process provides discreet tannins that underline the structure of the Grenache on the palate, while ensuring a nice ageing potential.
