Wine and food pairing

It will go perfectly with grilled fish such as red mullet and it brings freshness to a tapenade of black olives as an aperitif.


Custody advice

Ideal tasting temperature at 10°C. Tip: Put your rosé in an ice bucket with water and ice cubes rather than in the fridge.

Winemaking

The emblem of the Saint-Roux farm, Le Pigeonnier is the organic but modern variation of Provence rosé. The beautiful range of grape varieties gives it a fantastic regularity and consistency, vintage after vintage. Its intense freshness, both in colour and on the nose, is obtained thanks to the patient work of harvesting at night and the long cold stabling to optimise the contribution of the lees. Then, after harvesting, the juices are heated for fermentation between 14 and 18°C, in order to preserve the diversity of aromas. The wine is finished by aging for a few months on fine lees, followed by bottling at the end of the winter period.

Mr. Chapoutier

It all started in 1808 with the creation of Maison Calvet et Compagnie, located rue de l'Hermitage in Tain. In 1897, Marius Chapoutier joined forces with Rodolphe Delépine to found the Delépine et Chapoutier company. The wines are exported to Holland, Switzerland and Germany. Then in 1929, at the foot of the Hermitage hill, Marius created the new M. CHAPOUTIER winery. In 1937, Marius' son Marc took over the business. Today, with Mathilde and Maxime, a new generation joins Corinne and Michel Chapoutier to perpetuate the tradition of a family House.
